I have been loving quinoa lately. It has an awesome texture and can be paired with anything. My goal is to try to cook with more natural ingredients whenever possible. I’m trying to pack as many vegetables as I can into my meals.
This lunch is delicious, light, refreshing, crunchy, creamy, and packed with flavor.
Did I mention it’s super easy? 😉
Ingredients: Quinoa and everything on this cutting board
Bring 1 cup quinoa and 2 cups water to a boil, then simmer and cover for 15-20 minutes
Add red pepper, onion, tomato, avocado, cilantro, lime, salt, pepper. (You can also add oil and vinegar, but I skipped this step).
